If you have any interest in wild foods you have probably come across references to elder flower cordial, champagne and wine, or to elderberries made into jam or wine. The flowers were also used to make a flavoured vinegar which was used in the kitchen.
When you read back in time you indeed find that elder vinegar was quite regularly used in recipes. The Co-Operative Society in Manchester still listed elder vinegar as a product for sale until the mid-to-late 19th century.
